AOP Crémant de Loire: an exacting sparkling wine
Of all French sparkling wines, Crémant de Loire is unquestionably one of the finest and most demanding. Produced on the banks of the River Loire, renowned for its gentle pace of life, this wine has a singular freshness and minerality. Made using traditional methods, it has a wonderfully delicate sparkle – perfect for savouring life’s simple pleasures.
Vinify
to reveal
The must ferments naturally in temperature-controlled stainless steel tanks with capacities ranging from 27 to 200 hectolitres, according to the grape variety and terroir. With the aim of retaining the Chenin Blanc’s original freshness, Langlois uses neutral yeasts and never resorts to malolactic fermentation. The tanks and their temperature are, therefore, carefully monitored on a regular basis.
The delicateart of blending
After meticulously tasting the clear parcel wines and reserve wines from past vintages, the teams begin the blending process, using their knowledge and years of experience to guide their decisions. The next step is the second fermentation, this time in the bottle, following the traditional method.
Time
Having lavished such care on their wines, Langlois knows that only time can reveal their full aromatic potential. The perfect environment for this critical phase? The shadowy, cool depths of its three kilometres of underground cellars, hewn from the soft tuffeau rock during the Middle Ages.

This centuries-old tradition culminates in the rituals of riddling, disgorgement and dosage, bringing out the fully rounded character of each Crémant de Loire.
Naturally, rigorous quality control is maintained throughout the process, from vine stock to bottle dispatch. Each bottle is marked with a batch number that documents the care and attention that has gone into creating these fine sparkling wines.

By constantly challenging, future-proofing and adapting our methods, we ensure our sparkling wine always meets the highest quality standards, and even exceeds those set by the appellation’s specifications. Because to choose precision is also to assert our uniqueness.
The Domaine therefore undertakes to:
- Select its grapes from six terroirs renowned for their quality, including genuine “crus” (Coteaux Saint-Léger, Côtes de Saumur, Haut Layon, Puy Notre-Dame, Montreuil Bellay, and Layon Valley) ;
- Separate the cuvée from the taille during pressing, to keep only the precious premier jus ;
- Isolate each terroir and vinify them independently according to their unique characteristics to maximise the aromatic potential of their juice ;
- Avoid malolactic fermentation to preserve the natural freshness of the berries ;
- Use reserve wines from one or two previous vintages for the white wines, to give depth to the cuvées ;
- Allow wines to age for a minimum of eighteen months (instead of the regulatory twelve), with a three-month rest after disgorgement to refine their flavour profile.
